I love fried chicken. I loved it as a kid. I love it now. And I loved it in the years between. If you asked me on any given day how I would like my chicken cooked, you guess what I would say? Right. Fried.
I know, I know. It's unhealthy. Submerging chicken in inches of liquid fat? Gross.
Disgusting.
Unforgivable.
Oh, come on! Pleeeeeez.... It's not THAT bad!
Even if it is BAD, it is so worth it.
So.

I take out a pack of store bought chicken lollipop in the freezer but I'm only going to need about 8 pieces. You can substitute 6 pieces chicken wings or 6 pieces chicken drumsticks too, depending on the occasion.
What I mean is, if you're having your buddies over for beer to watch Pacquiao throw punches on your big screen, you're better off using chicken wings or drumsticks. But, if it's a Tuesday night and Barney's on your TV singing the I love you song with BJ and Baby Bop, chicken lollipop is it.
First, put the flour on a shallow dish. Add in your chicken powder and mix together.
Break egg on a small bowl and squeeze in the juice of 3 pieces of kalamansi. Beat quickly.
On another bowl, toss together your panko breadcrumbs and a teaspoon of dried oregano.
Now it's time to make the lollipops happy. Dredge the chicken in the flour and chicken powder mixture. Then, dunk into your egg mixture.
Coat completely with the breadcrumbs and oregano.
Deep fry in inches of hot oil for ten minutes on each side until golden brown. Do not rush this step, chicken is meant to be cooked well done.
Remove chicken from heat. Lay on a plate lined with a paper towel to absorb excess oil. I mean, if that will make you feel better... a few drops less fat off your chicken, to the paper towel, my friends! Why, that could save you a whopping TEN calories! (My gosh!)
Serve with ketchup. Or mustard. Or both.
Eat and be merry!

1/2 cup flour
1 tbsp chicken powder
1 large egg
3 pcs kalamansi

8 pcs. chicken lollipop (about 1/2 kg)
